Beet and Grapefruit Salad

Ingredients:

  • Two beets
  • Not a very large grapefruit
  • Half Onion
  • Arugula or spinach
  • A handful chopped walnuts
  • One tablespoon of olive oil and balsamic vinegar
  • Salt and pepper.

Preparation:
Cook the whole beets with its skin, in abundant boiling water with salt. Once ready, peel them under the faucet and cut into wedges. Reserve. Peel the grapefruit. This is only staying with their wedges with pulp, without any skin or those whites who have citrus.

Mix both ingredients in a container. Then add chopped nuts, toasted previously. Remember not to abuse lots of nuts, only a handful, to give flavor and texture, as all the delicious nuts. Season with salt, pepper, olive oil and balsamic vinegar.
